Blackcurrant Cheesecake Pot
This is me using my hazelnut biscuits, some leftover cream cheese and some blackcurrants I've been storing in my freezer. It is a cheesecake pot with a hazelnut biscuit base, vanilla cheesecake middle and topped with a blackcurrant and cassis jelly,
The biscuit base has a rich hazelnut flavour and is buttery and crunchy (it did require a strong spoon to initially break it, but after then it became crumbly). The cheesecake filling is creamy and has just the right balance of sweetness from the sugar and savoury from the cream cheese. The jelly topping has a strong blackcurrant flavour, aided by the cassis. It is fantastic, and the addition of whole blackcurrants makes it even more delicious.
