Peppermint and Raspberry Victoria Sandwiches

I thought there was nothing better than a traditional victoria sandwich, but it seems that there is. These are some individual vanilla victoria sandwiches filled with a peppermint buttercream and homemade raspberry jam.

The cake itself is just right as a victoria sponge. It has a lovely crumb and a buttery flavour. It is slightly denser than my normal cakes which is just as it should be, making for a delicious texture. The buttercrem has just enough peppermint flavour to cut through the raspberry jam giving a subtle hint that complements it wonderfully. These are absolutely perfect.
