Lavender and Almond Cake



This is a loaf cake made with ground almonds and sour cream flavoured with lavender flowers and soaked in a lavender and lemon syrup.

The texture of the cake is spot on due to the high proportion of ground almonds in the mix. This makes it moist, also contributed to by the addition of sour cream and the syrup. The lavender flavour is fairly strong but not overwhelming. I think this is a pretty good success in a simple bake.
