Parsnip and Maple Cake
This is a 'healthy' cake. It is a parsnip cake flavoured with ginger and light brown sugar, topped with chopped candied pecans and drizzled with a maple toffee sauce.
The cake itself was a new technique for a vegetable cake, using a separated egg method, and has fantastically light yet moist results. The topping is rich and sweet, giving a lovely taste. The texture of the pecans is fantastic and contrasts the soft cake well. It is delicious.
