Apple and Stem Ginger Kugelhopf



I have been playing yeasted cakes. This is my take on a kugelhopf which is spiced with ginger and contains apple chunks and chopped stem ginger. It is of course decorated with the essential icing sugar dusting.

The dough is significantly better than any previous yeasted cakes I have made. It is less of a batter and has a slightly more bread-like consistency, although maintaining the essential soft crumb. It did take three times as long to prove than anticipated (3 hours!) but I am glad I persevered and had patience for once. The flavour of the ginger is just strong enough to give spice without setting your mouth on fire! The apple complements it perfectly. This is definitely a delicious success!
