Strawberry and Blueberry Chelsea Buns



Today's bake was a nice traditional one. These are some chelsea buns filled with dreid blueberries, dried strawberries and raisins, glazed with apricot jam.

The dough is soft and light, with a crisp and sticky top. The fruit is moist and sweet and the flavours balance wonderfully. The only problem with them was that they were perhaps a little too small and hence a couple of minutes overbaked as I tried desperately to get them brown. Other than that, fantastic!
