Hot Cross Bun Tart



There is always left over hot cross bun to use up. So I have made mine into a bread and butter pudding style tart. The tin was lined with strips of homemade hot cross bun to form a case and filled with chunks of the same thing. It is all soaked in a vanilla custard and topped with demerara sugar.

The hot cross buns were delicious on their own, but this elevated them to a new level. It had just the right amount of liquid to soften the bread down to be moist. The tart shape held better than I expected and the final grilling of the top was definitely worthwhile, making it well browned and crisp. This has to be the best way of using up leftovers.
