Poppyseed Tarte au Orange



This is my take on a French tarte au citron. It features a sweet poppyseed shortcrust pastry case filled with a baked orange custard filling. 

The pastry is short and crisp with a wonderful texture due to the poppyseeds and ground almonds, giving it a crumbly bite. The filling is full of orange flavour, tangy and just the right sweetness. The consistency is perhaps 1 minute's baking from perfection, however there is no crack. It is creamy, smooth and delicious.
