Gooseberry Jam Thumbprints

These are some simple biscuits making use of delicious gooseberries. They are thumbprints filled with a homemade gooseberry jam.

The biscuit dough itself was soft when made and baked very similar to a sable. It is buttery and rich with a wonderful crunch. I managed to bake them without the base browning too fast for once due to some oven shelf position experimentation therefore I am very pleased. The jam has a lovely gooseberry flavour and I very much like the seeds in it. It may look a little like frogspawn but it all adds to the character.
