Goat's Cheese, Leek and Thyme Muffins

I felt it was time for some more savoury baking. These are some muffins with leek, goat's cheese and thyme.

They are moist and soft with a lovely cake-like texture however a very savoury flavour. The little pieces of goat's cheese are a delicious explosion in the mouth and are fantastic with the fresh leek pieces. They are delicious to go with any meal, or just as a snack on their own.
