Simnel Cupcakes

It is never too late for simnel cake. These are my simnel cupcakes which are a light muscovado sugar sponge flavoured with cinnamon, allspice and nutmeg, with orange zest and juice soaked raisins, sultanas and glacé cherries. They have the all important layer of homemade orange and almond marzipan.

The cake itself is light and moist, having risen well. The fruit is well soaked and therefore has a light orange flavour. The marzipan adds a wonderful kick to every bite and makes them even more delicious.
