Vanilla, Brown Butter and Pecan Cake
An interesting afternoon, but a cake has been made nonetheless. This is a buttery whisked sponge flavoured with vanilla, chopped pecans and browned butter. It is frosted in a brown butter italian meringue buttercream and decorated with chopped pecans.
The sponge is light and fluffy with a wonderful pecan flavour. The vanilla brings out the taste well. I did have to make my sponge again as the first time it sunk a little due to either too much raising agent or too much mixing. So after a few recipe alterations I produced something perfect. The buttercream is the best bit of it. It was my first attempt at italian meringue buttercream and it was very successful. It is light with a rich buttery flavour. This is one of the best tasting things I have baked!
