Mincemeat and Almond Friands
The mincemeat has been opened so it must be nearly christmas. I have used it to bake some friands made with ground almonds and flavoured with a pinch of cinnamon and some almond extract. They have a spoonful of mincemeat in the centre and are sprinkled with flaked almonds.
The sponge is slightly dense but moist as a friand should be and is delicious, especially seeing as I nearly did my 'forgetting the sugar' trick! The almond flavour compliments the mincemeat perfectly and the cinnamon adds a depth of winter spice. A great start to christmas.
