Honey and Rosemary Carrot and Parsnip Tarte Tatin
This is my take on the traditional festive treat of honey and rosemary roasted parsnips. It is a rough puff pastry tarte tatin with carrot and parsnip slices in a honey and rosemary syrup.
The pastry was well puffed and crisp with a delicious sweet vegetable topping and a strong rosemary flavour. It was a delicious dinner and definitely an improvement on my previous tarte tatin attempts despite my reservations on its savoury nature.
