Chicken and Vegetable Stew Pot Pie





I made an impromptu purchase this week so thought I would use it to make a wintry pie. It is a chicken, potato, onion and carrot stew flavoured with thyme, parsley and bay topped with shortcrust pastry.

The filling was warming, full of flavour and perfect for a cold winter evening. The pastry was wonderfully short, light and crisp and the dish served its purpose wonderfully. A wise buy for 70p!
