Moroccan Lemon, Seed and Honey Muffin





This is my Moroccan version of an English muffin. It is a dough similar to the tradition one, flavoured with honey. It is griddled and topped with a mixture of oil, lemon juice, lemon zest, black onion seed and sesame seeds which is then griddled to toasted.

The bread itself is perfect consistency, light and soft. It is sweetened lightly by the honey and flavoured wonderfully by the lemon and seed mix. The base is crisp and top soft. It was the perfect accompaniment to a tagine.
