Ginger and Lemon Treacle Tart Bars





I have made my twist on a treacle tart. They are bars featuring a shortcrust pastry base and a traditional treacle topping flavoured with lemon zest and juice, ginger and stem ginger pieces. They are decorated simply with some lemon zest.

I think I averted near disaster with this bake. I don't think that attempting a half size was the best idea and resulted in my filling leaking into my baking beans support slightly. It was a nightare therefore to get out of the tin however, once I did I think it all turned out ok. A few recipe improvements made and a future attempt would be far superiour!
