Iles Flottantes
I have been wanting to make this for ages. This is an iles flottantes. It is a poached meringue sat in a vanilla custard, drizzled with caramel and sprinkled with hazelnut praline.
This was a success. I got a little impatient with my custard but managed to catch it just before it curdled. The meringue was poached to firm and the caramel drizzle added a welcome sweetness. It was great!
