S'mores Brownies




I couldn't let bonfire night go past without baking my take on a classic. This is s'more themed traybake. It features a shortbread biscuit base, chocolate brownie centre and an italian meringue topping.

The biscuit is short and crumbly, although perhaps slightly more brown than planned as it seemed to cook rather a lot with the brownie mixture on top. The chocolate brownie is rich, gooey and delicious. The topping is light and fluffy although not quite as sweet as I would have liked I think I managed to heat my syrup a little fast and so it got a bit hot meaning it was slightly too much like foam than meringue! My oven is also still perplexing me with meringue. It seems like it is very reluctant to crisp up the outside, making it only soft and spongy. Other than that, they are delicious. A few improvements and a perfect chocolatey bonfire night bake would be achieved.
