Spiced Walnut Pudding with Caramelised Coffee Custard
Another hot dessert for coming into winter. This is a walnut baked sponge pudding flavoured with mixed spice served with a caramelised coffee creme anglaise.
The pudding itself was moist, light and had a lovely flavour. The custard was just the right consistency and the caramel sweetness was lovely. I perhaps got a little carried away with the coffee extract (finishing up the bottle is dangerous as it all tends to go in) but with a little less strength in that it would have been spot on.
