Raspberry and Almond Pithivier





I have been making some puff pastry and turning it into a pithivier. It is filled with an almond frangipane and raspberries.

The pastry puffed well with excellent layers. The frangipane is full of delicious almond flavour and the raspberries sweet. They match perfectly. The flavours are great. I still haven't managed to make a circular pithivier. Next time I will score it in a different manner so it looks more elegant. Other than that it was great!
