Lime and Cardamom Beignets
I have been experimenting using choux pastry. These are little fried balls of the dough tossed in lime and cardamom sugar and served with a fresh lime curd.
The choux balls are fried to golden however a method of drying them out inside needs to be found to prevent the slight soggy interior, either that or be less impatient and keep them in the fryer longer! Their texture is almost doughnut like though so moreish and comforting. The lime sugar is full of fresh lime flavour as is the curd. It could have taken twice as much cardamom to bring the spice out more but aside from that they are delicious. A reasonably successful experiment I would say.
