Plum, Honey and Pine Nut Upside Down Cakes

I have been baking with some more autumn fruit. These are some individual upside down cakes. They feature a slice of plum, a honey sponge, honey drizzle and chopped pine nuts.

The cake is light and moist with a deliciously sweet flavour. The plum and honey are lovely together. The crunch of the pine nuts is required and adds a different texture to the bake. It was typical that when I wanted a small plum, I could only buy large ones and therefore they don't look quite as planned, but I am very happy nonetheless.
