Cranberry and Pear Cake
Today it was seasonal baking time. I have made a fairly plain brown sugar sponge cake with a layer of pear slices in the centre topped with sticky baked cranberries.
The cake is a victoria sponge recipe baked to perfection. It is light and spongey with a sweet buttery taste. The brown sugar adds that hint of extra flavour. The pear slices in the middle compliment the cake wonderfully. If I knew the cake would turn out that size I would have added a second layer of pear. The cranberries on top are slightly sour and contrast the sweetness of the sponge. It is a delicious cake.
