Three Cheese and Onion Flaounas
These are some pies resembling those baked during the last series of the Bake Off as a technical challenge. They are my version of a cypriot flauona filled with a mix of chopped onion along with gruyere, cheddar and parmesan cheese flavoured with a little mustard powder and cayenne pepper. It is encase inside a yeasted pastry sprinkled with black onion seeds.
The 'pastry' seemed more like a bread dough when I made it due to the kneading and rising process. It also baked similarly but, due to the filling, remained thin and light. The filling is aerated by baking powder and so less dense than a British quiche. The cheese flavour is strong and absolutely delicious, with the three types being well balanced. The onion enhances the flavour further, and the seeds give a final kick to every bite. These are great little pies. Next time I would possibly knead the dough a little less to keep it slightly less doughy, but other than that these are absolutely heavenly and make for a fantastic lunch, dinner or afternoon snack.
