Blackberry and Honeycomb Cheesecakes
I have made some miniature cold set cheesecakes. They are a light brown sugar biscuit base with a vanilla cream cheese topping, fresh blackberries and homemade honeycomb pieces.
The biscuit base is crumbly and crunchy with a rich butteriness and a lovely caramel flavour from the light brown sugar in the biscuits. The cheesecake has just the right amount of gelatine so it is soft and creamy but set well. I walked all round town trying to find some perfect blackberries for the top and eventually ended up paying rather a lot from a 'posh' shop but it was worth it as they look great and have the right sweetness. There is nothing worse than a tart blackberry on a dessert, it would ruin the whole thing! The honeycomb is crunchy and tops off the cheesecakes wonderfully, matching well with the fruit and giving a boost of sugar. These are fantastic, and definitely not bad considering I made the cheesecake mix very fast before work at 6.30am!
