Coconut Creme Brûlée Rice Pudding
This is the first time in a very long time I have made rice pudding. I have used coconut cream to the mix and topped it with caster sugar which I brûléed with my blowtorch.
The flavour of the coconut is just strong enough to be tasted but not overwhelm. The consistency of the rice pudding is just right as a cold dessert, and the sugar crunch on top is delicious.
