Lemon and Lavender Mousse Cakes
This is something I have been wanting to attempt for age, a piped mousse. These are some miniature lemon and lavender whisked sponges filled and topped with a lemon mousse and sprinkled with crushed lavender flowers.
The cake itself is very light and soft as it is purely eggs, sugar and flour. It has a lovely flavour but could perhaps do with a little butter to make it slightly richer and create a less sponge-like texture. After being patient and waiting for my mousse to set enough to pipe, I managed to create the peaks that held their shape. I am very happy this actually worked! They taste great and I am quite pleased with their elegance too. I think the mousse could take a little less gelatine as it is well set, but aside from that it is spot on.
