Redcurrant Jammy Pinwheels



These are an interesting take on a jam tart. They are a shortcrust pastry pinwheel with a redcurrant and rosemary jam centre, dusted with icing sugar.

I am very happy with how these turned out in the end. I expected the jam to run out everywhere and not stay contained in the centre, however it seems that the use of a preheated baking tray and thin pastry meant that it was able to bake before the jam boiled. This means they still look elegant and held their pinwheel shape. The pastry could perhaps have done with a little more sugar but other than that these are delicious.
