Brazil Nut and Caramel Filo Cigars



These are some filo pastry cigars filled with a mixture of chopped brazil nuts and caramel sauce, drizzled with caramel and sprinkled with more brazil nuts.

The pastry was not as easy to stretch as my normal filo so I was a little worried about it before it baked. I think I was lazy in the kneading and it could have done with another couple of minutes to ensure it was completely smooth and elastic. It did, however, bake to wonderfully light, crisp and flaky so I am very happy. The caramel is sweet and delicious, tasting great with the earthy brazil nuts. These are better than I imagined and would be fantastic hot or cold.
