Gooseberry Cakes



Two years ago I baked an Eton mess cake with a rich buttery whisked sponge that I remember as being heavenly in flavour and texture. I have used a very similar mix to bake some little vanilla cakes with gooseberry halves.

The cakes turned out just as I hoped, being as light as air with a melt in the mouth butteriness. The flavour of the gooseberry is fruity and slightly tart which works well with the sweet cake. These are absolutely delicious and would be perfect with a nice cup of tea.
