Cherry and Blueberry Iced Ring



This is my cake that uses seasonal summer fruits. It is a ring cake flavoured with a lemon zest with fresh blueberries and chopped cherries. It is drizzled with a lemon icing and decorated with fruit. 

The cake is very light and moist as it contains ground almonds and sour cream. This gives it a delicate crumb that is lovely to eat, but did make it difficult to remove from the tin. The lemon brings out the flavour of the fruit wonderfully giving a sweetness to the sponge. I am really pleased with the elegance of the finish, although I'm not too sure how well it will transport to work tomorrow. I think I may have to do a quick patch up. But for now it is great!
