Spiced Peach Queen of Puddings

This is a Queen of Puddings with a vanilla breadcrumb custard base, peach jam spiced with cinnamon and ground cloves, and a meringue topping.

The custard is far better than my last attempt at this dessert as it was baked to a slight wobble, cooling to set. The jam is fruity and has the right amount of sugar to give a lovely sweetness. The combination of spices makes it absolutely delicious. It is soft and has the perfect consistency. The meringue is browned and crisp but could have done with a bit more sugar to make it slightly sweeter and be able to pipe it into peaks. It would also make it look much glossier. However, all the flavours work wonderfully and I think is looks great very appealing.
