Burnt Honey Steamed Sponge
This is my version of a classic steamed syrup sponge pudding made with burnt honey.
The deep colour is due to the burnt honey, made by bubbling honey until golden brown. It took a few attempts to get something that wasn't overdone as it seems that, if it is it hardens and becomes unusable. The syrup doesn't drizzle down like a syrup sponge, but the flavour is intense enough that this doesn't need to happen. If you preferred a pudding with a little more sauce you could add more burnt honey during serving, but a big dollop of custard or a scoop of ice cream would finish it off nicely.
