Fish Chowder Gougère



This is a gougère. It features a ring of choux pastry filled with a fish chowder mixture of potato and cod in a lemon, onion and parsley sauce.  

The chowder filling itself is absolutely delicious, creamy and full of flavour. The choux pastry is light, crisp and aerated. The parts above the fish mix is well dried out however I would use a little more choux paste in the dish to ensure the bottom can be too, making it slightly less soft. However it is fantastic nonetheless and made for a wonderful dinner.
