Passionfruit Brioche Custard Tarts
These are some custard tarts that are baked in a brioche case as opposed to pastry. They are similar to a gateau a la creme, but in miniature form and with a passionfruit custard.
The brioche is perfectly soft and buttery, and was probably about 5 minutes from perfectly proved hence the slight crack through the egg wash. The custard has a deliciously sweet passionfruit flavour but could have done with being a little looser so it didn't form so much of a skin. Other than that they are perfect.
