Fig and Macadamia Florentines
These are some florentines with macadamia nut chunks and dried figs, with a dark chocolate base and drizzle.
The biscuit is lacy and thin, baked to crisp. The crunch from the macadamias and slightly chewy fig textures are a great contrast. The flavours can be tasted well and are delicious, with the dark chocolate being slightly bitter to combat the sweetness of the demerara sugar in the biscuit. I did have to return them to the oven as I didn't cook them for quite long enough initially as I was scared to make them too brown, but it turns out they will darken considerably but not become burnt tasting or bitter. They are light and fantastic biscuits.
