Sprout and Bacon Filo Cups
These are some Christmas canapes of homemade filo pastry tart cases with a quiche filling containing onion, brussel sprouts and bacon lardons, flavoured with a pinch of nutmeg.
The filo pastry is crisp, light, flaky and buttery, and was just about baked underneath, with no soggy bottoms in sight. I think using a preheated baking tray might have helped this further, so perhaps I will do so next time. The flavours of the filling are absolutely delicious and bring out all the best bits of brussel sprouts, with the subtle bacon and nutmeg flavours enhancing the vegetable. These are very moreish and are a great way to get into the festive spirit.
