Lime and Chocolate Sachertorte

I have been baking a sachertorte, a traditional cake from Vienna. Mine is a chocolate sponge flavoured with lime, coated with a chocolate mirror glaze and decorated with lime zest.

The torte sponge is rich and slightly dense in texture, as desired, and very moist. The glaze has a wonderful shine and a rich dark chocolate flavour. The lime marries with the chocolate well and makes for an absolutely heavenly bake.
