Artichoke and Red Pepper Pissaladerie
I have used the idea of a pissaladerie, and made what ended up being a topped flatbread that possibly more closely resembles a pizza. It is a plain dough topped with sauted onions flavoured with rosemary, thyme, sage and garlic, and sprinkled with chopped artichoke pieces and sliced red peppers.
The flavours of the topping are delicious, with just the right combination of spices. I think the onion could have been cooked down even further to caramelise it a little more, but other than that I have no complaints. The dough is light and crisp, however to make it more like a pissaladerie as I was intending I would have needed to have proved it after shaping for a little longer. Possibly a bit more patience would have contributed to this bake. But, as pizzas go it was pretty good!
