Pomegranate Genoise Squares



These are some little genoise sponges sandwiches with a vanilla and pomegranate creme au berre, and topped with a pomegranate jelly and pomegranate seeds.

I know many people dislike pomegranate and think it has no taste, but I have transformed it into some delicate little cakes. The sponge is light and soft, and the filling has a subtle pomegranate flavour. The jelly posed a few problems as I started to pour it on top whilst still quite liquid and it ended up soaking into some of the sponge. After quickly realising this, I stopped and popped it all in the freezer. Luckily I still had enough to pour a layer of perfect thickness on the top. I really like these cakes and think they would stand up against the toughest of pomegranate critics!
