Butternut Squash and Blueberry Muffins



These are some blueberry muffins spiced with cinnamon and nutmeg, made with butternut squash and sprinkled with pumpkin seeds.

For a supposedly simple bake, these muffins ended up rather tricky, and I even baked them for a second time to try and put into practice the required improvements. It seems the amount of baking powder I added the first time was about twice too much and they rose then sunk a little as they cooled, although I am unsure whether this was also because they were a little underbaked.  It is hard to tell as they are full of fruit and wonderfully moist from the butternut squash. The flavour is delicious and they are a great muffin but just need a few perfecting touches.
