Peach and Redcurrant German Pancake
I have baked a German pancake, which is very similar to a Yorkshire pudding, and filled it with fresh peach slices and redcurrants, before dusting it with icing sugar.
The pancake rose spectacularly, even making its way out of the dish. I think I perhaps got a little carried away with the quantity of batter I used. It has a plain flavour but matched the fruit wonderfully and is a great carrier for the fresh topping.
