Apricot, Almond and Fennel Seed Biscotti



It is compulsory to bake biscotti for Christmas. These are filled with dried apricot and blanched almond pieces, flavoured with fennel seeds and drizzled with white chocolate.

I would say I was less than 5 minutes away from creating perfection. The original bake could have done with a little longer therefore they wouldn't have needed so much drying out in the oven on the second bake. But with some perseverance I managed to get them to be crisp, crunchy and (almost) able to break your teeth! The flavours are delicious, they are absolutely jam packed with nuts and fruit, and the chocolate drizzle adds a touch of elegance.
