Apple and Damson Linzertorte



This is my autumn version of an Austrian Linzertorte. It is a sweet shortcrust pastry case filled with a homemade apple and damson jam. 

The pastry is short and crumbly, eventually baking to golden brown with no soggy bottom (once again my oven was slow at baking pastry bases properly). The jam filling is sweet and fruity with a wonderful autumn flavour. This is basically a giant jam tart. What could be more delicious?!
