Fig and Chocolate Frangipane Tarts



These individual tarts are made of a chocolate shortcrust pastry case with chocolate and almond frangipane, topped with fig slices and brushed with honey to glaze.

The pastry is short, crumbly and has a slight chocolate bitterness which is cut through by the sweet honey and figs. The frangipane possibly needed a little cocoa powder to add a deeper chocolate flavour, but it is baked to slightly soft due to the moisture from the figs and is therefore indulgent and delicious. I think they look perfect and taste pretty good too!
