Strawberry, White Chocolate and Vanilla Cake
This is my Birthday Cake. It is a two tiered vanilla sponge filled with white chocolate ganache and decorated with the same ganache and chocolate dipped strawberries.
The cake is light and moist due to the high liquid content and the flavour delicate. The white chocolate ganache did set well eventually however was a little tricky to use as I didn't have time to wait for it to set to a completely spreadable consistency; next time a little less cream and perhaps some gelatine! The strawberries are pretty and set it off well. I am very happy indeed. One improvement I would make would be to add a chocolate collar to each tier however unfortunately time, equipment and expertise lacked for this to be done!
