Rum and Raisin Loaf
This is a boozy sweet dough loaf made like a lardy cake but with rum buttercream instead of lard and sprinkled with raisins.
The layers inside look fabulous and the bake was perfect. The flavour of the rum is a little subtle. The sultanas are full of it however the butter needs a slightly bigger kick. Perhaps a little more sweetness and a rum glaze would finish it off. Other than that, I am very pleased, especially seeing as it was very hard to shape due to the moisture!
