Rose, Cardamom and Pistachio Dacquoise




These are some individual dacquoise of pistachio and cardamom spiced meringues filled and topped with rose water cream. They are decorated with chopped pistachios and freeze dried raspberry pieces.

The meringue is perfectly dried out and the cream on top is perfectly soft and smooth, contrasting the crisp texture. The pistachio makes it light, and the subtle cardamom adds a great depth of flavour. The addition of the rose water in the cream provides a floral freshness. I am very happy with the taste and look. All I need now is to continue in my search for edible rose petals to finish off the look!
