Raspberry Fondants





These are some mini cakes of a genoise sponge with raspberries, raspberry creme au berre, almond marzipan and raspberry fondant icing, topped with freeze dried raspberry pieces.

The cake was light and moist with the raspberries adding a great sweet addition. This did make them bend over making it difficult to ice and decorate. The flavour of raspberry is strong, with the raspberry creme au berre and icing appreciating the addition of natural colourings and flavourings. They are perfect bites of deliciousness!
